These super sustainable rope-grown Mussels are harvested just down the road from us in Lyme Bay. The mussels are carefully steamed and preserved in a very light Escabeche before being ladled by hand into tins.
The classic Escabeche sauce is made with spices, vinegar, oil, and a pinch of salt.
Wonderful just as they are, as part of a delicious tapas, or use them to make a simple seafood pasta.
