Rather unusually we hang all our Native Breed Pork for at least three weeks, this results in a lingering depth of flavour and firm texture, creating pork that is really special.
Due to our pig's properly free range lifestyle and their diverse diet, our pork loin has a wonderful sweetness to the meat and the most incredible rich buttery fat.
Free Range Pork
Our pork has the most amazing crackling. We always suggest roasting the loin of pork for 15 minutes at 240C to give the crackling a head start.
Turn down the oven to 180C and roast for 35 minutes for a 1kg joint.
(Cook for an additional 20 minutes per kg).
Leave to rest uncovered for at least 20 minutes.
All of our meat is delivered frozen ready to pop straight into your freezer, once defrosted these can be kept in the fridge for up to 3 days.

As said in my general review I was surprised this arrived frozen. It was a much fattier loin than I had had before, but this may be due to their happy lives so wasn't too much of a problem, but it was odd that the skin wasn't scored at all - on a roasting joint?? The roasting timings were helpful and worked well and the meat was tasty, so overall OK and maybe next time, now I know it comes frozen I'll be prepared, but surely the lack of scoring was a mistake.
2 weeks ago we cooked and ate a piece of pork loin which we purchased from you a couple of months ago which was excellent and our lunch guests remarked on it. I purchased the joint below for a family lunch last Sunday and when cooked I was really disappointed with the piece of meat as it was very dark meat and looked more like rolled leg or shoulder and not the white loin meat I expected.
Having had a fabulous turkey at Christmas I was hoping the Pork Loin would be equally as good. Very disappointed - purchased a 2kg and 1.5kg for Mother's day, sadly the meat was very fatty which you don't expect with loin and a lot of waste. Would not purchase again.
