Where is lardo cut from?

Lardo is simply subcutaneous back fat of our Saddleback pigs, usually around three inches in depth. It is cured using our traditional bacon brine, air dried and trimmed ready for you to use at home. Delicious simply sliced on toast as the Italian do, or diced and added to any dishes that require a flavour bomb.
