In creating this wonderful saucisson, careful maturation, combined with natural mould floral has led to a decidedly moreish saucisson with peppery notes. The subtle, rich flavour is well balanced in the salty meat and creamy fats.
Using pasture-reared Tamworth pork from Fred Price's Gothelney Farm, this is an exceedingly unique and sustainable range of charcuterie. This means that these salami aren't just delicious - but they are ethically made, locally sourced and delicious to boot. A true masterclass in regenerative, circular farming and the wonderful products that are produced from it.
This wonderful artisan salami arrives with a coat of grey mould. The careful maturing informs the mould-ripening process, allowing the microbial terroir at Westcombe to impart its unique character and flora onto the charcuterie. All our Westcombe Charcuterie products are ready to eat. They are stable at ambient temperatures (below 18°C), and will stay safe during transport and stored in your kitchen or larder.
