Autumn calls for hearty, warming dishes that nourish our bodies and warm us up, fuelling us through the longer days and darker evenings. 

This delicious stew does just that; packed with the flavoursome goodness of our natural chicken sausages, protein-rich beans and leafy kale, it offers a tasty meal that can be made quite effortlessly in one pot. 

Topped with a creamy pesto, all this needs is a good slab of buttered bread to mop up every last bit of the delicious sauce.

  • Heat the oil in a large saucepan over medium heat. 

    Add the chicken sausages and cook until they are golden brown. Once cooked, remove the sausages from the pan to a plate and set aside for later.

    Add to the pan your onion and garlic and cook until softened.

    Add the tomato passata, honey and beef broth or stock and season to taste with salt and pepper. Simmer uncovered for 30 minutes.

    Meanwhile, make the pesto. Blend all the pesto ingredients in a food processor until smooth. Add a dash of water or olive oil as necessary until you have reached the desired consistency. 

    Add the sausages and drained butter beans to the simmering stew. Simmer on a low heat for about 30 minutes.

    Add the kale leaves and simmer for another 10 minutes.

    Serve the stew in bowls with a dash of homemade pesto and a slice of buttery bread on the side.
