Frequently Asked Questions for Nose to Tail
How do you make chicken soup from a carcass?
Place the carcass and some diced veg like celery, onion and carrots into a large deep pot and cover with water so the carcasses are neatly submerged. Put the lid on the pot and bring to the boil, skim off any of the foam of that bubbles to the top so that your stock will be clear once finished. Simmer on the lowest setting of your hob for roughly 6 hours, but really as long as you can leave it. The longer you cook it the more gelatinous your stock will be.
