Unlike a traditional crumbly Wensleydale, the team at Curlew Dairy use a slower, pre-warm recipe which leads to the smoother, buttery texture. The cheese is clothbound and aged in their maturing room for 3-4 months.

About the Maker
Curlew Dairy are a micro dairy based in Wensleydale, producing small batches of traditional farmhouse Wensleydale cheese using local unpasteurised milk.
The team at Curlew recognised that the key to award-winningly good cheese was truly delicious milk. All their milk comes from a small, local herd of Holstein and Ayrshire cows, who enjoy grazing the lush Yorkshire pasture during the warmer months and haylage through the colder months. This results in a beautiful, subtly sweet milk which is left unpasteurised to truly reflect the 'terroir' of the farm; every aspect of the cows' lifestyle - the weather, the grazing, the season and even the bacteria in the soil - plays a part in the final flavour of this truly special cheese.
