  • Using the whole animal is so important to us at Pipers Farm - we don't believe that anything should go to waste.

    Of all the culinary activities we've lost touch with, making pure, authentic stocks and broths from bones is one we'd especially like to rekindle everyone's passion for. So simple, so satisfying and so much better than cubes, powders or jellies. Proper bones make a stock that has a unique depth of flavour and is packed with nourishing vitamins and minerals perfect for making beef bone broth.

    Our 100% Grass Fed Beef Bones are full of gelatinous marrow. A simple stock can form the basis for outstanding gravies, broths, soups and casseroles.

    Stock bones weigh approximately 1kg. Bones shape and sizes vary per pack. 

    From time to time our stock pouches may get pierced during transit, when you come to defrost the stock we recommend placing it in a bowl, just in case to capture any liquid.

  • How to make a nutrient rich beef bone broth:

    Place the beef bones in a large stockpot and pour water over until they are completely submerged. 

    Roughly chop a couple of carrots, onions and celery, and add to the pan.

    Pour in a little apple cider vinegar. 

    Bring the pan to the boil. Once it has reached a vigorous boil, reduce to a simmer and gently cook for 8 hours. 

    After 8 hours remove the pan from the heat and leave to cool slightly. 

    Strain through a fine muslin to remove any debris. 

    Decant into containers and leave in the fridge for up to 7 days, or freeze for later use.

Fillet Tail & Sichuan-Style Noodle Broth

A simple noodle bowl built around a good stock and some simple aromatics; topped with slices of tender fillet tail and a fiery chilli oil spiked with some distinctive tongue-numbing Sichuan pepper. You can use any steak you fancy to finish the dish, or even switch it to chicken if you change the stock accordingly.

Start with our 100% grass-fed beef bones for the deepest flavour and most nourishing broth. Place the bones in a large stockpot and cover with water until fully submerged. Roughly chop a couple of carrots, onions, and celery, then add them to the pan along with a splash of apple cider vinegar. Bring the broth to a vigorous boil, then reduce to a gentle simmer and cook slowly for 8 hours, allowing the rich, meaty flavours to develop. Once done, remove from the heat and let it cool slightly before straining through a fine muslin to remove any debris. Decant into containers and store in the fridge for up to 7 day.
