About our Free Range Duck Breast

Our free-range duck breasts make a mouth-watering feast. With crispy skin and a rich buttery texture, the sweet meat has a real depth of flavour. 

Our ducks live a properly free-range life, roaming amongst lush Devon pasture, eating a natural diet of forage and whole grains. Our free-range duck live significantly longer than most other free-range and organic birds. 

We hang our ducks for a week to further develop a depth of flavour and enhance the delicious texture of the meat. 

Each duck breast weighs approximately 250g.

Storage

Your meat will arrive frozen.
When your meat arrives simply pop it into your freezer.
When you have chosen what you would like to eat, drop your items, still in their individual packaging into cool water and wait for 15 minutes...

Notes from the kitchen

Bring the duck breast to room temperature and preheat your oven to 180C.

Carefully pierce the fattiest parts of the skin all over and season the fat with sea salt and pepper.

Take a cold cast iron pan and place skin side down. Only turning the duck once the pan is up to full temperature and you hear the fat sizzle.

Turn the breast onto the flesh side and cook for 1 minute until browned.

Once the fat has rendered and the duck breast browned (should take no longer than 5 minutes) pop the pan into your preheated oven and cook for a further 6 minutes.

Remove from the oven and rest for at leats 10 minutes, uncovered.
