Where is brisket cut from?
Brisket is made up of the flank muscles which are attached to the brisket bone where the rib bones join between the front legs of the animal. A well-filled brisket is a sure sign that the animal has matured and marbled. Taking a lot of the animal's weight the Brisket is fatty and rich in collagen. We remove our brisket from the bone, trim it of some the superficial fat and tie into a neat joint perfect for smoking, pot roasting or slow cooking.
