  • Our Properly Free Range goose breast makes such a wonderful festive treat. Beautifully plump with rich sweetness unlike anything else. Grown just for the festive season to make your Christmas really special.

    Our free range Goose Breast is pure luxury, we only rear a very small number of our incredible award winning geese each year and they are only available in December.

    Our geese are grown slowly after being hatched in early spring. They spend their whole life outside roaming on lush pasture and eating a totally natural diet. Once our geese have reached maturity they are hung for 14 days and dry plucked individually by hand. They are a real labour of love and meticulously prepared by hand creating such a special artisanal treat for your Christmas table. 

    Our Goose Breasts are perfect for those wanting a taste of stunning goose without cooking a whole bird. 

    Our Free Range poultry is naturally reared, so weights are not absolutely precise.

    We recommend 150g per portion.

    All our Goose Breasts are delivered blast FROZEN.

    We recommend placing your order for your Christmas Goose as early as possible to avoid missing out. We only have a limited number of Geese available this Christmas. 

    You can place your order at any time (while stocks last) and book your delivery closer to Christmas.  

  • 100% Free Range Goose

  • Take the goose breast out and allow to reach room temperature.

    Carefully slice the fat covering, being careful not to slice through to the flesh. Then season the skin.

    Take a heavy cast iron pan and place on a high heat.

    Once the pan is smoking hot, place the goose breast in skin side down. Cook the skin until it crisps, being careful not to burn it.

    Flip over and seal the flesh side of the breast for around 2-3 minutes.

    Pop the breast into a preheated oven set to 180C and cook for about 15 minutes. Using a meat thermometer, the temperature in the thickest part of the breast should be 55°c. Or if you use a small knife or skewer the juices should run pink and after leaving in for 10 seconds the tip should be just warn if tested against the back of you hand. .

    Leave to rest for 15 minutes, then slice and serve.

  • If your bird has been delivered fresh, take it out of its wrapping. 

    Place your bird on a wire rack or a plate and place it on the bottom of your fridge. 

    Make sure you leave space around your bird to allow the air to circulate and ensure it stays dry.

    Keep hold of your card label for the 'best before' date and the weight of your bird. We recommend you leave your meat at room temperature for a few hours before cooking.


    If your bird has been delivered frozen, you can pop it straight into the freezer until you are ready to use it. 

    Depending on the size of your bird, you'll want to allow plenty of time to defrost it.

    Remove from its packaging then put your bird on a wire rack or on a plate and place it at the bottom of the fridge. 

    Make sure you leave space around your bird to allow the air to circulate and ensure it stays dry.

    For large birds, allow two to three days to defrost in the fridge. For the breast and leg, one to two days will be fine.

    We recommend you leave your meat at room temperature for a few hours before cooking.

We deliver everything to your door in sustainably sourced, recyclable packaging. Our properly free range meat is carefully wrapped in a fully home compostable, 100% British sheep's wool pouch to keep it in perfect condition during delivery. Should any of your meat thaw during delivery; you can safely refreeze it and keep it frozen for up to 6 months. When you're ready to cook up a feast, you can speedily defrost most of our meat in 15 minutes (larger joints take a little longer). Simply place the items still in their individual packaging into cool water and they will carefully thaw.
