A totally delicious organic halloumi, made with fresh sheep’s milk at High Weald Dairy in Sussex.

Classicly firm and squeaky to the bite if eaten raw. When grilled or barbequed this halloumi takes on a wonderful melting marshmallow-like texture with a crispy shell.

Try our Organic halloumi grilled and melted on top of our lamb burgers, or tossed through our Hodmedod's couscous, or simply as part of a vibrant salad.

Approximately 150g

Pasteurised sheeps' milk (MILK), salt (2%), mint, vegetarian rennet.

Cheese Care

It is necessary to apply a common sense approach to cheese care and respond to the cheese you have in front of you, as opposed to following rigid guidelines.

The best option is to keep the cheese wrapped in its waxed paper within a box in the fridge. The container will help to prevent the cheese from drying out and prevent the cheese from absorbing flavours.

Our cheese are sent out with 20 days shelf-life.

About the producer

High Weald Dairy

In the late 1980s Mark and his parents Guy and Audrey, established a flock of 150 British Friesland sheep for milking at their small family farm in Duddleswell. The idea was to sell the milk to a local cheesemaker but, with each sheep producing up to three litres of rich milk every day, they were soon faced with a surplus. As a result, they began to bottle the fresh sheep milk and sell it to local health food shops where it was in high demand as a delicious and nutritious alternative for people with an intolerance to cows’ milk.

Sheep milk yogurt followed next, and then a selection of cheeses, including 100% sheep milk Halloumi, Medita – a version of Greek feta cheese, and a fresh Ricotta cheese.

High Weald Dairy currently make 15 different cheeses with the entire process for each one taking place on the farm. It’s fair to say that cheese is a bit of an obsession for Mark and his sister Sarah- who even has a cheese named after her!
