      • A generous, flavoursome muscle, our incredible 100% grass fed ox cheeks are the perfect cut for slow cooking.

        Despite having always been a favoured cut amongst chefs, ox cheeks have only recently experienced a revival in popularity for home cooking. Becoming wonderfully tender when slowly cooked, packed with natural collagent and boasting an incredibly rich depth of flavour, it makes the perfect component for unctuous stews, ragus and nutritious, thick broths. 

        We also love incorporating ox cheek into a hearty pie, with plenty of root veg, a rich gravy sauce and a dash of stout for extra flavour. 

        Whilst requiring a little patience to get the very most out of ox cheek, it's a classic cut that that will reward you with utterly delicious flavour.

        Due to rearing in harmony with nature, the size of each ox cheek will vary slightly. Approx. 300g each

      • 100% Grass Fed Beef

      • Preheat your oven to 180C. 

        Thaw completely and remove the cheeks from their packaging, patting them dry with a cloth or some kitchen towel.

        Season a handful of plain flour with sea salt and black pepper, then toss the cheeks in the flour to coat thoroughly and evenly. 

        Place in a large, heavy bottomed casserole dish with a little olive oil and butter or ghee, and cook until browned. 

        Once browned, remove the cheeks from the pan and add some roughly chopped veg (carrots, onion, celery, garlic) and cook until nicely softened and translucent. 

        Return the ox cheeks to the pan, along with some bay leaves, red wine, beef stock and a glug of stout or red wine. Bring everything to a simmer and then transfer to a preheated oven. Cook for 4-5 hours, until the meat is beautifully tender and the sauce is rich, thick and flavoursome. 

      • All of our meat is delivered frozen ready to pop straight into your freezer. Once defrosted these can be kept in the fridge for up to 3 days.

      All Pipers Farm meat is blast frozen at the perfect moment, locking in important nutrients and guaranteeing it tastes amazing. We deliver everything to your door in sustainably sourced, recyclable packaging. Our properly free range meat is carefully wrapped in a fully home compostable, 100% British sheep's wool pouch to keep it in perfect condition during delivery. Should any of your meat thaw during delivery; you can safely refreeze it and keep it frozen for up to 6 months. When you're ready to cook up a feast, you can speedily defrost most of our meat in 15 minutes (larger joints take a little longer). Simply place the items still in their individual packaging into cool water and they will carefully thaw.
