Where is Sirloin cut from?

The eye of the Sirloin is called the 'Longissimus Dorsi' and runs the whole length of the carcass from the rump to halfway up the neck. This is where you will find the most fine-grained cuts on the carcass. We seam out the sirloin muscle, removing it from the bone and tie it with a covering of fat to create a show-stopping joint.
