      • Our 100% Grass Fed Mutton Shoulder offers plenty of tender meat. We've kept it on the bone to benefit from maximum flavour from the rich marrow created from an animal that has had a proper life. Our Grass Fed Mutton Shoulder benefits from our method of hanging on the bone for two weeks, allowing the flavour to intensify and the muscles to relax through maturation. 

        The secret to success with the shoulder of mutton is a slightly longer, slower roast. The meat will become so meltingly delicious it will fall off the bone and can be eaten with a spoon - a method known as a la cuiller. 

        A proper grass fed shoulder of mutton is a real autumnal treat. Beautiful melt in the mouth meat, with such incredible depth of flavour.

        Cull Yaw is a term commonly used in Cornwall to refer to a cull ewe, which is a sheep that is no longer suitable for breeding. 

        Our mutton sheep are reared for at least 7 years, resulting in a rich and deep flavour. After their breeding cycle, they forage in ancient woodlands and rich herbal leys to add a wonderful layer of fat that enhances the taste further. 

      • Grass Fed Mutton

      • Preheat the oven to 200C. While the oven is warming, get a good handful of rosemary, mix with a good slosh of oil, a pinch of sea salt and cracked black pepper. Rub all over the mutton shoulder.

        In a roasting dish add some halved onions and a pouch of stock. Place a roasting rack on top and place the shoulder onto the rack.

        Roast for 30 minutes. It should begin to have a lovely brown colour.

        Reduce the oven temperature to 130C, cover with foil and continue to roast for 4 hours. The meat will be completely tender and will fall off the bone.

      All Pipers Farm meat is blast frozen at the perfect moment, locking in important nutrients and guaranteeing it tastes amazing. We deliver everything to your door in sustainably sourced, recyclable packaging. Our properly free range meat is carefully wrapped in a fully home compostable, 100% British sheep's wool pouch to keep it in perfect condition during delivery. Should any of your meat thaw during delivery; you can safely refreeze it and keep it frozen for up to 6 months. When you're ready to cook up a feast, you can speedily defrost most of our meat in 15 minutes (larger joints take a little longer). Simply place the items still in their individual packaging into cool water and they will carefully thaw.
