      • Our traditional Handmade Wellingtons offer a truly decadent feast, with all the hard work done for you. 

        Each of our Wellingtons is handmade by talented chefs, using carefully selected fillets of our 100% Grass Fed Beef or Properly Wild Venison. These tender fillets are encased in our signature duxelles, then wrapped in deliciously buttery pastry. A combination of traditional methods, award-winning meat, top quality ingredients and meticulous attention to detail from talented chefs make these Wellingtons a truly spectacular centrepiece to any special festive feast. 

        Grass Fed Beef Wellington

        The star component of this Beef Wellington is the Grass Fed Beef Fillet, which has to be one of the most sought-after cuts of beef. Famed for its delicate texture that melts like butter, it's the perfect choice for a decadent feast. We slowly rear our 100% grass fed, native breed cattle, which is then hung on the bone for at least 4 weeks, resulting in the unparalleled texture and flavour we are famous for. 

        Wild Venison Wellington

        Made using a cut of our prized Wild Venison Saddle Fillet, a truly sensational cut boasting a fine-grained texture and rich, rounded depth of flavour. All our wild venison is completely free ranging and it is probably one of the most ethical and sustainable choices for your plate. By choosing our wild venison you are directly supporting the careful management of our countryside, improving biodiversity of farmland and woodland habitats and protecting fledgling forests for future generations to enjoy.

        How to serve

        We recommend that each Wellington serves two people rather generously. Packed with tender meat and unrivalled flavour, these Wellingtons require little more than some seasonal veg to make a hearty meal.

      • Beef Wellington

        Beef Fillet, Mushrooms, Red Onion, Thyme, Rosemary, Garlic, Port (SULPHITES), Prosciutto, Butter (MILK), Puff Pastry (Wheat Flour [GLUTEN], Calcium, Carbonate, Iron, Niacin, Thiamin, Marharine (Vegetable Oils), Water, Salt, Emulsifier), Sunflower Oil, Salt, Black Pepper, Glaze (MILK, EGG).

        Venison Wellington

        Venison Saddle Fillet, Mushrooms, Red Onion, Thyme, Rosemary, Garlic, Port (SULPHITES), Prosciutto, Butter (MILK), Puff Pastry (Wheat Flour [GLUTEN], Calcium, Carbonate, Iron, Niacin, Thiamin, Marharine (Vegetable Oils), Water, Salt, Emulsifier), Sunflower Oil, Salt, Black Pepper, Glaze (MILK, EGG).

        Made in a kitchen that handles CELERY, GLUTEN, EGGS, FISH, MILK, MUSTARD, NUTS, PEANUTS, SESAME & SOYA.

      • Allow the Wellington to defrost thoroughly before cooking.

        Preheat your oven to 200C. Place your Wellington on baking tray lined with baking paper. Place into the preheated oven, uncovered, and cook for 15 minutes, until the pastry is golden brown. 

        Once the pastry is evenly golden, turn the oven down to 170C and cook for another 12-15 minutes, still uncovered. 

        For optimium results, use a temperature probe; you're aiming for a temperature of 43C. Be sure to insert the probe through the side of the Wellington, instead of the bottom, to avoid any of the delicious juices escaping. 

        Once cooked, leave the Wellington to rest for 7-10 minutes before serving. 

        • Delivered frozen ready for you to store in your freezer. To thaw, remove the packaging and place on a plate in the fridge for up to 1 day. Once opened use within 3 days and keep refrigerated 0-5°C

      All Pipers Farm meat is blast frozen at the perfect moment, locking in important nutrients and guaranteeing it tastes amazing. We deliver everything to your door in sustainably sourced, recyclable packaging. Our properly free range meat is carefully wrapped in a fully home compostable, 100% British sheep's wool pouch to keep it in perfect condition during delivery. Should any of your meat thaw during delivery; you can safely refreeze it and keep it frozen for up to 6 months. When you're ready to cook up a feast, you can speedily defrost most of our meat in 15 minutes (larger joints take a little longer). Simply place the items still in their individual packaging into cool water and they will carefully thaw.
